I love biltong, grew up eating it, and eat it whenever I am in South Africa - from local butchers or The Biltong Shop (a chain). My husband surprised me with two slabs recently. The texture is a little off for biltong, which usually has a distinct grain, and is darker on the outside, whether very dry or more moist. This slab was uniformly dark and strangely smooth when cut, almost like oily plastic. The flavor? Pepper becomes very dominant, and that is also not typical. Strong cloves? Can't taste any coriander. It has the burny aftertaste of some jerkies, rather than the succulent meatiness of good biltong. If you have never had real biltong, you might like it as a snack - it's not bad. But if you know the genuine thing it will fall short of your expectations.

How is biltong made?
It’s simple! Top round beef is seasoned with vinegar and dry-rubbed with simple spices before it is hung to air dry at room temperature for up to two weeks. Once dried, we slice it ultra-thin for easy to eat tender pieces every time. Season, dry, slice, that’s it!
Is biltong jerky?
